Boysenberry Syrup Cake — A Tart-Sweet Dessert

A boysenberry syrup cake combines the rich, buttery crumb of a cake with the tangy-sweet burst of boysenberries and a homemade syrup topping. It’s a layered dessert where the syrup adds moisture and flavor, while the berries provide a refreshing contrast to the cake’s sweetness.

You can make the cake using a classic boysenberry cake base and then drizzle it with homemade boysenberry syrup for extra flavor and shine.

Boysenberry Cake Base Recipe 

Ingredients:

•    ¼ cup shortening
•    1 cup milk
•    1½ cups flour
•    1/8 tsp salt
•    2 cups sugar (divided)
•    2 tsp baking powder
•    2 cups boysenberries (frozen, partially thawed)
•    2 tbsp butter, cut into pieces

Instructions:

1.    Preheat oven to 325°F (160°C).
2.    In a bowl, whisk flour, salt, and baking powder.
3.    Cream shortening and 1 cup sugar until light.
4.    Add flour mixture alternately with milk, beating until smooth.
5.    Grease a 13×9-inch pan and spread batter evenly.
6.    Sprinkle 2 cups berries over batter, then 1 cup sugar, dot with butter, and pour 1 cup                     hot water over berries.
7.    Bake about 1 hour until set.
